Ingredients
Wet
- 3 chipotle peppers in adobo sauce
- 1 cup reduced-sodium chicken broth
Dry
- 4 garlic cloves, thinly sliced
- 3 teaspoons dried oregano
- 1/2 teaspoon ground cloves
Meat
- 1 boneless beef chuck roast (3 to 4 pounds)
Instructions
Prep the Roast
- Mix dry ingredients together in bowl (except bay leaves)
- Coat the roast with 1/4 to 1/2 of the seasoning (keep remaining, will use later)
- Wrap in plastic wrap
- Set if fridge for 12-36 hours
Smoke the Roast
- Pull Roast from fridge
- Preheat smoker @ 225°
- Once Roast is at room temp, put in smoker
- Smoke for 6-8 hours, or until internal temperature is 190°-200°
Make Barbacoa
- Pull the roast from the smoker and cut into smaller pieces
- Add meat to crock pot
- Add remaining dry seasoning to the crock pot
- Add all wet ingredients to the crock pot (dice up peppers in adobe sauce)
- Mix and let sit for 1-2 hours on high
- Shred the beef and serve
