Ingredients

Wet

  • 1/4 cup lime juice
  • 1/4 cup cider vinegar
  • 3 chipotle peppers in adobo sauce
  • 1 cup reduced-sodium chicken broth

Dry

  • 4 garlic cloves, thinly sliced
  • 4 teaspoons ground cumin
  • 3 teaspoons dried oregano
  • 1-1/2 teaspoons pepper
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 3 bay leaves

Meat

  • 1 boneless beef chuck roast (3 to 4 pounds)
 

Instructions

Prep the Roast

  1. Mix dry ingredients together in bowl (except bay leaves)
  1. Coat the roast with 1/4 to 1/2 of the seasoning (keep remaining, will use later)
  1. Wrap in plastic wrap
  1. Set if fridge for 12-36 hours

Smoke the Roast

  1. Pull Roast from fridge
  1. Preheat smoker @ 225°
  1. Once Roast is at room temp, put in smoker
  1. Smoke for 6-8 hours, or until internal temperature is 190°-200°

Make Barbacoa

  1. Pull the roast from the smoker and cut into smaller pieces
  1. Add meat to crock pot
  1. Add remaining dry seasoning to the crock pot
  1. Add all wet ingredients to the crock pot (dice up peppers in adobe sauce)
  1. Mix and let sit for 1-2 hours on high
  1. Shred the beef and serve
