⭐️ Chicken Enchiladas

Ingredients

  • 3 chicken breasts
  • 2 cups chicken broth
  • 1/2 chopped onion
  • 1 can diced green chilis
  • 1/2 can diced jalapeños
  • 1/2 cup green chili sauce (I use Las Palmas Green Chili Enchilada Saice)
  • 2 tablespoons of flour
  • 1 cup shredded cheese
  • Flour Tortillas

Instructions

Cook Chicken

  1. Cook chicken in crockpot with 1-1/2 cup chicken broth, shred and set aside

Make the Filling

  1. Sauté onions in olive oil until translucent
  1. Add green chilis and jalapeños
  1. Sprinkle flour over mixture
  1. Mix 1/2 cup of chicken broth and the green chili sauce
  1. Continuously mix until it forms into a thick gravy
  1. Stir in chicken and cheese, take off heat

Bake the Enchiladas

  1. Line a pan with flour tortillas
  1. Roll filling in tortillas and place in the pan
  1. Pour remaining filling over pan and top with shredded cheese
  1. Cover and bake for 45 minutes, uncover, bake for additional 15 minutes.
