⭐️ Chicken Enchiladas
Ingredients
- 1/2 cup green chili sauce (I use Las Palmas Green Chili Enchilada Saice)
Instructions
Cook Chicken
- Cook chicken in crockpot with 1-1/2 cup chicken broth, shred and set aside
Make the Filling
- Sauté onions in olive oil until translucent
- Add green chilis and jalapeños
- Sprinkle flour over mixture
- Mix 1/2 cup of chicken broth and the green chili sauce
- Continuously mix until it forms into a thick gravy
- Stir in chicken and cheese, take off heat
Bake the Enchiladas
- Line a pan with flour tortillas
- Roll filling in tortillas and place in the pan
- Pour remaining filling over pan and top with shredded cheese
- Cover and bake for 45 minutes, uncover, bake for additional 15 minutes.
