Cod w/ Creamy Spinach Sauce
Ingredients
- 1 red bell pepper, chopped
- 1 lemon (half and cut 4 slices, keep halves for juice)
Steps
- Sauté vegetables until onions are golden brown
- Add in heavy cream and vegetable broth, mix in
- Season filets with salt, pepper, garlic and paprika
- Nestle cod filets into sauce, spoon some sauce over the top
- Top filets with slices of lemons and juice remaining lemon into the mixture
- Top with spinach and cover, stirring occasionally to mix the spinach into the sauce
- Cook until the cod reaches 165 and serve
