Cod w/ Creamy Spinach Sauce

Ingredients

  • 1 red bell pepper, chopped
  • 1/2 onion, chopper
  • 5 mushrooms, sliced
  • 2 handfuls Spinach
  • 1/2 Heavy Cream
  • 1/4 cup vegetable broth
  • 2 cod filets
  • 1 lemon (half and cut 4 slices, keep halves for juice)

Steps

  1. Sauté vegetables until onions are golden brown
  1. Add in heavy cream and vegetable broth, mix in
  1. Season filets with salt, pepper, garlic and paprika
  1. Nestle cod filets into sauce, spoon some sauce over the top
  1. Top filets with slices of lemons and juice remaining lemon into the mixture
  1. Top with spinach and cover, stirring occasionally to mix the spinach into the sauce
  1. Cook until the cod reaches 165 and serve
