Hoisin Glazed Pork Chops with Teriyaki Lentils

Ingredients

Hoisin Glaze Pork Chops

  • 2 Pork Chops
  • 1/2 cup Hoisin Sauce
  • 1 tbsp Oyster Sauce
  • 2 tbsp Soy Sauce
  • 1 tsp chili oil
  • 2 tsp Ground Ginger
  • 2 cloves Garlic, minced

Teriyaki Lentils

  • 1 cup Red Lentils
  • 2 cups Water
  • 2 tbsp Teriyaki Sauce
  • 1 tbsp rice vinegar or apple cider vinegar
  • 2 cups Spinach, chopped
  • 1 Green Onion, chopped, separate whites and greens
  • 3 cloves Garlic, minced

Directions

  1. Mix Hoisin Sauce, Oyster Sauce, Soy Sauce, Chili Oil, Ginger, and Garlic to a bowl to make the glaze
  1. Add Pork Chops to the glaze, let sit for at least 30 minutes
  1. While pork chops soak, heat a wok or pot with oil until hot, add garlic and green onion whites until aromatic
  1. Add teriyaki sauce and vinegar to wok/pot with garlic and onion, mix
  1. Add lentils and water, bring to boil, then reduce to simmer and cover and let cook for 15 minutes
    1. After 15 minutes, mix the spinach to the lentils, and cover and let cook for another 5-10 minutes
  1. While lentils cook, heat up a skillet with oil until hot
  1. Add pork chops to skillet and baste with remaining glaze as the pork chops cook
  1. Plate the pork chops and lentils, garnish with remaining green onion greens
